Has anybody been using Roast.Time on a Mac with the M1 chip? Any issues with that new chip?

Yes, MacBook Air M1 (2020) with macOS Big Sur 11.4 works great first try. This inexpensive cable works great for a clean connection to the roaster without any adapters:
