Creating new bean in my inventory - limited options on certain fields

Why are the Flavor, Process and Variety fields hard coded choices? I have flavor notes, processes and varietals that are not options. Am I missing something? It doesn’t seem to let me add new options in these fields unless it matches an existing choice. This is forcing me to either leave things blank or misrepresent a coffee in my inventory. And presumable misrepresent it to the community. I am new here so, maybe I am missing something, please advise.

Did you pick an existing bean or create something new? I noticed that when I picked one from the dropdown list that I wasn’t allowed to modify any of the fields either, but if I added a new bean then I was free to edit all the fields.
