What is the difference in same Ethiopian beans in wet or dry process?
Time to end for the dry will be more then the wet?
Can someone explain me please what is the difference in roast?
I want to do light roast and I can’t do it without defects.

Washed (aka Wet) coffees have an abundance of acidity, what they lack is sugar, sugar is soluble and the beans will lose a lot of their natural sugars during the washing process.
If you’re looking for a balanced cup profile you need to curb the acidity and highlight the sweetness. After 1st crack acidity will be at it’s highest and decline thereafter, therefore allow a longer development time, depending on how lively or balanced you want your cup.
Conversely, naturals (aka Dry) contain an abundance of sweetness but lack acidity. Therefore apply a short development time to preserve the acidity.
Honeys will require a middle ground.
Focusing on what the coffee lacks combined with your desired cup profile is one strategy.
