For a Full City, what percent of weight loss should I shoot for?
Depends on the variety of the greens, age and the processing. Roast to color and the weight will probably be consistent from roast-to-roast. I roast to the start of 2C/Dark (darker than FC). I’ve seen everything from 11+% to 18+% weight loss. For a given lot of the same variety, the WL is fairly consistent roast-to-roast. If it isn’t consistent then I’ve probably done something wrong (usually to do with misidentifying the start of 2C). By way of example note the 2nd roast compared to the preceding and following roasts. I likely misidentified 2Cs as shown by End Temp & Loss values…
