In Roast Time, while in the roasting mode, you will notice a group of buttons on the bottom with labels such as “Yellowing,” “First Crack Begin,” etc. You can simply click those as you observe those things happening.
You can also use the default keyboard shortcuts:
1 = Yellowing
2.= First Crack Begin
3 = First Crack End
etc.
The default keyboard being the buttons on the display screen on the bullet?

I have another point I just posted …identifying the graph lines? What color goes with what information point? I thought I saw this in a recipe I downloaded but now I can not find this in my latest roast?
You can use your mouse to click on the boxes for the different milestones or use the shortcut keys and bypass the mouse.
Pressing the 1 key on your keyboard is the same as using your mouse to click on Yellow.

Maybe this is what you are asking about:
if you click on the User icon
then click on edit settings
Then click on the Themes and UI size:
These settings will also be applied in Roast World.
In Roast World, you can toggle the different graph lines on or off by using the chart settings button
