How would I adjust this roast to get the end time closer to 10 minutes with the same end temp?

Less fan. Perhaps a max of F3 or F4.
Or more heat.

Delay increasing your fan to F5 by a minute or so? The fan has a strong cooling effect. Might also need to delay the power cut to P4, but I’d bet the fan change alone would do it. HTH. - B
